Their tenderness towards each other would probably be seen as "normal" and unremarkable (but it wouldn't be! It would still be special and incomparable!). I love both of these characters—Arria, proud, repressed and deeply confused and angry about how deeply she has feelings; Floria, sunshiney, passionate, and expressive—and I am just bowled over by how open Floria is about her feelings for Arria, from “how beautiful you are!” to “I wish I were a cavalier so I could duel for your hand and marry you!” And the way that no matter how angry and jealous Arria gets at Floria, she just can’t stay mad or stop embracing her. Gah. I just want them to be happy together!
Some ideas:
—AU where Floria does get to duel for Arria’s hand! Maybe she and her father capture (or rescue) the ship bringing Arria the convent to Rocaverde? Or maybe Floria is disguised as a boy while she travels with her father and decides to keep up the disguise when she comes to Rocaverde?
—(During canon) Maybe Floria persuades Arria to investigate what happened with Estevan while Luís is away, and they do some detecting together (and also kiss).
—Postcanon, Arria and Floria ruling Rocaverde together while Luís and Estevan are off a-pirating.
—A scene during or post-canon where Arria actually reckons with her feelings and admits that she returns Floria’s feelings would also be lovely.
(Note: I’m fine with keeping the canon het romances alongside Arria/Floria, or erasing them, or simply ignoring them without a mention for the purposes of the story; however, I’d prefer that there not be angst or conflict relating to infidelity or a break-up—I’d like to be able to assume that everyone is happy with whatever the relationship situation is.)

Maybe in this version, Bertrand even abducts Gabrielle specifically to be a companion for his sister? Or maybe the abduction and forced-marriage happen as in canon, but he then hands her over to the protection of his sister (or she takes charge once she realizes what has happened? A situation where Gabrielle is caught between sister and brother and is unsure whether she can trust either could also be neat!). Would Adela be as proud and harsh as her brother? Or would she be desperate for female companionship (and love) having spent all her adult life as nearly the only woman, and the only woman of rank, in her brother’s castle? A situation where Adela is the older, more sophisticated, Dark Fuck Lady to Gabrielle’s ingenue could be fun, but so could one where Gabrielle, with her experience of the convent, shows the isolated Adela what love can be. Basically: anything you want to write for this pairing would be amazing!
f!Bertrand/Gabrielle: I just think it would be neat if Bertrande/Bertrude/Bertha d'Arsy is a proud lady knight who has defied her family and gone off adventuring and is used to taking what she wants, who decides to steal her brother's fiancée just because she can. Maybe she's not even imagining she could be romantically or sexually attracted to the lady in question and feelings develop gradually, or maybe she's planning to ravish her but then holds back when she meets Gabrielle's resigned dignity, or maybe she isn't *planning* to fall for her captive, but catches feelings almost immediately; maybe she is the more experienced one who teaches Gabrielle that love and pleasure don't have to involve men; or maybe Gabrielle, with her experience of all-female spaces and the romances that bloom in them, is the one to melt her defenses and show her that they could be happy together. Adela/Gabrielle: I’m SO FASCINATED by the hints we get about Adela d’Arsy in canon—the only family member Bertrand ever cared about, and who was evidently a statuesque grande dame who left all kinds of gorgeous clothes and jewels when she died—, and I would adore an AU where Adela survived and is living with Bertrand as the lady of his castle. Maybe in this version, Bertrand even abducts Gabrielle specifically to be a companion for his sister? Or maybe the abduction and forced-marriage happen as in canon, but he then hands her over to the protection of his sister (or she takes charge once she realizes what has happened? A situation where Gabrielle is caught between sister and brother and is unsure whether she can trust either could also be neat!). Would Adela be as proud and harsh as her brother? Or would she be desperate for female companionship (and love) having spent all her adult life as nearly the only woman, and the only woman of rank, in her brother’s castle? A situation where Adela is the older, more sophisticated, Dark Fuck Lady to Gabrielle’s ingenue could be fun, but so could one where Gabrielle, with her experience of the convent, shows the isolated Adela what love can be. Basically: anything you want to write for this pairing would be amazing!
f!Bertrand/Gabrielle: I just think it would be neat if Bertrande/Bertrude/Bertha d'Arsy is a proud lady knight who has defied her family and gone off adventuring and is used to taking what she wants, who decides to steal her brother's fiancée just because she can. Maybe she's not even imagining she could be romantically or sexually attracted to the lady in question and feelings develop gradually, or maybe she's planning to ravish her but then holds back when she meets Gabrielle's resigned dignity, or maybe she isn't *planning* to fall for her captive, but catches feelings almost immediately; maybe she is the more experienced one who teaches Gabrielle that love and pleasure don't have to involve men; or maybe Gabrielle, with her experience of all-female spaces and the romances that bloom in them, is the one to melt her defenses and show her that they could be happy together. Or some other scenario that you come up with entirely!
